Prawn Biryani

Delicious Prawn Biriyani is a special rice that can be made quickly and enjoyed by the prawn lovers.
Preparation Time : 10-15 mins

Cooking Time : 45-60 mins

Serves : 8-10

Ingredients:
  • King Prawn - 1kg
  • Basmati Rice - 1kg
  • Oil - 250ml (125ml for the rice and 125ml for the prawn masala)
  • Cinnamon - 2-3 pieces of 1 inch long strips
  • Cardamom - 2
  • Cloves - 3-4
  • Onion - 3 small (1 for the rice and 2 for prawn masala)
  • Tomato - 4 medium
  • Green Chillies - 4-5
  • Carrot - 2 medium
  • Ginger-Garlic paste - 3 tblsp
  • Coriander leaves chopped - 3 tblsp
  • Mint leaves chopped - 2 tblsp (optional)
  • Ghee/Butter - 1 tsp (optional)
  • Lemon juice - 1 tblsp
  • Water - as required
  • Salt - to taste

Spice powders:

  • Turmeric powder - 1/2 tsp
  • Chilli Powder - 1 tsp
  • Pepper ground - 1 tsp
  • Cumin (jeera) powder - 1/2 tsp

​Ingredients to fry prawns

  • Turmeric powder - 1/2 tsp
  • Chilli powder - 2 tsp
  • Lemon juice - 1 tblsp
  • Ginger-Garlic paste - 1 tblsp
  • Salt - as required
Method:


Preparation

Chop all the onion, tomato, coriander and mint leaves; Slit the chilli. slice the carrot into 1cm thick slices.


Method to cook rice



  1. Wash and soak the rice in a big pot of water for 10 minutes. Drain it.


  2. Heat a pan on a medium heat and add about 125ml of oil.


  3. Season with cinnamon,caradmom and cloves.


  4. Add about 1 chopped onion and half of chopped coriander leaves and mint leaves; fry for about 3-4 minutes.


  5. Add rice and fry for about 4-5 minutes.


  6. Add about 1litre and 400ml of boiling water, butter/Ghee and salt.


  7. When the water starts to boil, reduce the flame to low, cover and cook the rice until all the water is evapourated.



Method to make prawn masala



  1. Mix all the ingredients listed to fry the prawns.


  2. Add prawns to this mix.


  3. Heat a 2-3 litre pan on the stove and add rest of the oil.


  4. Add all the prawns into the pan.


  5. Fry for about 1-2 minutes on a medium heat, remove them from the pan and set aside.


  6. Heat the oil in the pan where prawns were fried.


  7. Add salt, rest of the chopped onion and sliced carrots; stir for about 7-8 minutes on a medium heat until they become mid brown.


  8. Add chillies and ginger-garlic paste and fry for about 1-2 minutes.


  9. Add chopped tomatoes, rest of chopped coriander and mint leaves, chilli powder, turmeric powder, cumin powder and ground pepper; fry until the tomatoes are cooked well.


  10. Add fried prawns and lemon juice; let it cook for about 2-3 minutes.



Method to make Biryani:



  1. Add the cooked rice to the pan of prawn masala, stir well and place the pan on low heat for about 6-8 minutes.


  2. Serve it hot with Cucumber Raitha.
