Quick Chicken Souvlakis with Roasted Pepper Hummus

Ingredients:

    For the Souvlakis

    400g/14oz chicken thighs, boneless, skinless
    1/2 tsp dried oregano
    1/2 tsp pepper
    1/2 tsp salt
    30ml/1fl oz olive oil
    15ml/0.5fl oz lemon juice
    Zest of 1 lemon
    3 whole wheat tortillas (gluten-free optional)

    For the Hummus

    100g/3.5oz garbanzo beans/chickpeas (canned)
    100g/3.5oz roasted bell pepper
    6g/0.25oz garlic, crushed
    30ml/1fl oz lemon juice
    30ml/1fl oz olive oil
    1/2 tsp paprika
    1/2 tsp salt
    1/2 tsp pepper

Method:
  1. Cut chicken thigh fillets into cubes.
  2. In a bowl, combine olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper. Add in chicken and toss thoroughly.
  3. Thread chicken into skewers and cook in a grill pan on high heat for 4 minutes per side.
  4. While chicken is cooking, prepare hummus. Add all ingredients to a food processor and pulse until smooth.
  5. Serve with warm wheat tortillas.
