Cilantro Latkes with Five-Spice Apple Sauce

Ingredients:

    For the Potato Latkes

    250g/8.75oz potato
    20g/0.75oz fresh cilantro, chopped
    1 tbsp. flaxseed meal
    30ml/1fl oz water
    1/2 tsp. turmeric powder
    15g/0.5oz potato flour
    1/4 tsp. pepper
    1/4 tsp. salt
    30ml/1fl oz olive oil

    For the Apple Sauce

    200g/7oz apples, peeled and chopped into ½” cubes
    1/4 tsp. star anise
    1/4 tsp. cinnamon sticks
    1/4 tsp. black peppercorns
    1/4 tsp. black cardamom pods
    1/4 tsp. fennel seeds
    50g/2oz shallots, thinly sliced
    30ml/1fl oz apple cider vinegar
    62.5ml/2fl oz maple syrup
    500ml/17fl oz water

Method:
  1. For the Latkes
  2. Boil potatoes for about 10 minutes.
  3. Dilute flaxseed meal in 2 tablespoons water and leave to bloom for about 5 minutes.
  4. Peel and run the potatoes through a coarse cheese grater.
  5. Combine grated potatoes, flax mixture, chopped cilantro, potato starch, turmeric powder, salt, and pepper in a bowl.
  6. Heat olive oil in a skillet.
  7. Drop loose mounds of potato mixture in the hot oil and fry over medium heat for 2-3 minutes per side.
  8. Drain on paper towels.
  9. Serve with apple sauce on the side.
  10. For the Apple Sauce
  11. Combine all ingredients in a saucepan and simmer for 10-15 minutes or until apples are fully tender. Add more water if necessary.
  12. With a potato masher, mash the apples in the pan, leaving some chunks whole.
