Arugula and Pumpkin Seed Pesto

Rocket salad or arugula/rucola is a plant belonging to the mustard family. It’s grown widely across the Mediterranean region and represents an integral part of their local cuisine. Known for its peppery, savoury taste, its leaves are commonly added raw or cooked to pasta, pizza and various mixed salads. The arugula originates in the region covering Northwest India, Tadzhikistan, Uzbekistan and western provinces of China. Subsequently arugula was cultivated by the Romans who ascribed it with aphrodisiac properties. The early Roman Catholic Church knew about this and later prohibited the cultivation of the roqueta (i.e. rocket) within monastery walls. Arugula is a source of different biologically active compounds which are able to reduce the risk of various types of cancer, whilst also having anti-inflammatory effects. Like most greens, arugula is high in carotenes, vitamin C and folic acid. Its raw green leaves are recommended for people with stomach pain, ulcer disease and heartburn symptoms. Arugula is an ideal recipe condiment for weight loss diets. Due to its spicy and nutty flavour, it has been recognised to assist against any impulsive habit of emotional eating, by attracting your attention to the taste. Ingredients:
  • 60g/2oz arugula/rocket/rucola
  • 30g/1oz roasted pumpkin seeds
  • 5g/0.25oz garlic
  • 75ml/2.5fl oz extra-virgin olive oil
  • 25ml/1fl oz lemon juice
  • ½ tsp. salt
Method:
  1. Process all ingredients in a food processor.
  2. Serve over toast, pasta, or grilled meat and vegetables.
