Lemon Rice

Lemon Rice turns the cooked rice into a tastier packed lunch.
Preparation Time : 5 mins

Cooking Time : upto 5 mins

Serves : 2

Ingredients:
  • Cooked Rice - 3 cups
  • Lemon juice - 60ml
  • Oil - 2.5 tblsp or 35ml
  • Dried Red Chilli - 2
  • Mustard seeds - 1 tsp
  • Urid dal - 1 tsp
  • Curry leaves - 7-8
  • Turmeric Powder - 1/4 tsp
Method:
  1. Warm up the cooked rice if it is not warm enough and leave the cooked rice on a wide dish so that it will be to be easier for stirring.
  2. Heat a small frying pan on a stove.
  3. Pour the oil into the pan.
  4. When the oil is hot enough, add mustard seeds, urid dal, curry leaves and red chilli.
  5. Fry for a min. Add turmeric powder and lemon juice.
  6. Let it boil for 2-3 mins until most of the oil separates out from the lemon juice.
  7. Switch off the heat.
  8. Pour this mixture to the dish of cooked rice.
  9. Stir well.
  10. Lemon Rice is ready to be eaten.

Notes:
Red chilli can be replaced by Green chilli. Cooked rice is measured in a cup that holds about 250ml water. Goes well with <a href="/recipes/Potato-fry">Potato fry</a>.
