Dahi Vada

Dahi Vada is an Indian delicacy made with lentil and yoghurt.
Preparation Time : 10-15 mins

Cooking Time : 30-45 mins

Ingredients:
  • Urid dhal - 250g or 1 of 250ml cup
  • Ground rice - 1 tblsp
  • Sodium bicarbonate - 1/8 tsp
  • Onion - 1 small
  • Crushed pepper - 1 tsp
  • Grated ginger - 1/2 tsp
  • Curry leaves - 1 sprig
  • Green Chilli - 1 (optional)
  • Oil - 350ml for frying
  • Water - as required
  • Salt - to taste
  • Yoghurt (curd) - 1 tblsp

Ingredients to make yoghurt mixture

  • Oil - 1 tblsp
  • Mustard seed - 1 tsp
  • Split urid dal - 1 tsp
  • Grated ginger - 1/2 tsp
  • Green chilli - 1
  • Curry leaves - 1 sprig
  • Yoghurt (curd) - 750g
  • Coriander leaves - to garnish
Method:
Preparation:

  1. Wash and soak the urid dal in water for atleast 2 hours. Drain it.
  2. Chop the onion,curry leaves and chilli. Grate the ginger. Crush the pepper corns.
  3. Grind Urid dal in a blender with salt, sodium bicarbonate and little water.
  4. Grind them to a fluffy texture.
  5. Remove the dal batter from the blender and place it on a big bowl.
  6. Add ground rice, chopped onion, curry leaves, chilli, grated ginger and pepper. Stir well.
  7. Leave this batter on a normal room temperature for atleast 2 hours.
Cooking Method:

  1. Heat a wide frying pan and add oil.
  2. Season with mustard seeds, split urid dal, curry leaves, ginger and chilli.
  3. Switch off the heat. Add beaten yoghurt to the pan. Stir it. Keep this yoghurt mixture aside.
  4. Heat a deep frying pan. Add oil.
  5. Take tablespoonful of batter with wet hands; flatten them into round cakes with a hole in the middle and drop it into boiling oil. 3-4 may be fried at a time.
  6. Keep a big bowl of warm water with a tablespoon of yoghurt added.
  7. When both sides are evenly brown, remove them and place them in the bowl of warm water.
  8. Fry the next set of vadas. Just before removing the next set of fried vadas from the frying pan, drop the vadas left in a bowl of water to the pan of yoghurt mixture.
  9. Repeat these steps of making vada, frying them, putting them in warm water and after few minutes of leaving them in water, remove them and put them in yoghurt mixture.
  10. Add more beaten yoghurt to the yoghurt mixture if needed.
  11. Garnish them with coriander leaves.
  12. Delicious Dahi Vadas are ready to be eaten.
