Drumstick with prawns

Drumstick is an Indian originated long vegetable with a dark green skin and white flush and seed inside. Frying that with Indian spices and prawns makes a tastier side-dish.
Preparation Time : 10 mins

Cooking Time : 10-15 mins

Serves : 3-4

Ingredients:
  • Drumstick- 3 long
  • Onion - 1 small
  • Tomato - 1
  • Tomato puree - 1 tsp
  • Turmeric powder - 1/8 tsp
  • Chilli powder - 1 tsp
  • Prawn - 8-10 or 50g or Egg - 1
  • Green chilli - 1 (optional)
  • Tinned coconut milk - 1 tblsp or 2-3 tblsp fresh & thick coconut milk
  • Cinnamon - 1cm long strip
  • Curry leaves - few (optional)
  • Cooking oil - 3 tblsp
  • Salt - to taste
  • Water - as required

Method:
  1. Chop the onion and tomato. Chop the vegetable into 2 inch pieces.
  2. Heat a pan and add oil.
  3. Add curry leaves, onion and chilli; saute for about 2-3 minutes.
  4. Add 1 or 2 prawns for just the flavour;
  5. Add chopped vegetable, tomato puree, turmeric powder and chilli powder and stir-fry for about 1-2 minutes.
  6. Add salt and 3/4 cup of water.
  7. Cover and cook on a medium heat until the vegetable is cooked well. It might take about 8-10 minutes or longer.
  8. Stir the vegetables and check the water level few times when they are getting cooked.
  9. Add rest of the prawns and coconut milk in the end and let it boil for further 2-3 minutes.
  10. If egg is being added intead of prawns, beat it first and add it after the vegetables are cooked.
