Coriander Chicken fry

Coriander chicken fry is made with the aromatic flavour of coriander leaves and other Indian spices.
Preparation Time : 10 mins

Marination Time :2-3 hrs Soaking Time :

Cooking Time : 15-20 mins

Serves : 5-6

Ingredients:
  • Chicken - 500g - cut into small pieces
  • Turmeric powder - 1/2 tsp
  • Grated coconut - 1 tblsp
  • Onion chopped - 1 tblsp
  • Lemon juice - 5ml
  • Salt - to taste
  • Oil - 3 tblsp
  • Chopped coriander leaves - 2 tsp to garnish

Marinade:

  • Chopped coriander leaves - 6 tblsp
  • Red Chilli - 5-6
  • Cumin (Jeera) seeds - 1 tsp
  • Ginger - 1 inch long and 3/4 inch wide piece
  • Garlic - 6 cloves
  • Vinegar - 75ml

Method:
  1. Grate the ginger and garlic.
  2. Grind all the ingredients listed under Marinade into a smooth paste.
  3. Marinate the chicken pieces with the ground marinade paste, turmeric powder and salt for atleast 2 hours.
  4. Chop the onion; Grate the coconut. Grind the onion and coconut with little water into a smooth paste.
  5. Heat a pan and add oil.
  6. Add the marinated chicken pieces without the marinade to the pan; Let it brown on both sides;
  7. Now add the marinade, ground onion and coconut; stir well; cover and cook on low heat for about 7-8 minutes.
  8. Sprinkle water if needed.
  9. Garnish with coriander leaves.
  10. Coriander chicken fry is ready to be served.

Notes:
This dish can be served as an appetizer.
