Spinach Stirfry

Spinach or any greens can be cooked with Indian spices.
Preparation Time : 5 mins

Cooking Time : 10 mins

Serves : 5-6

Ingredients:
  • Spinach or Any greens - 200g
  • Red Chilli - 1-2
  • Indian onion shallots - 5-6 or 1/2 medium onion
  • Cumin (jeera ) powder - ½ tsp
  • Grated Coconut - 1 tblsp (optional)
  • Curry leaves - few (optional)
  • Grated Ginger - 1/4 tsp
  • Oil - 2 tsp
  • Salt - to taste

Method:
  1. Leave greens in a pan of water for about 5 minutes. Wash properly until all the grit is gone.
  2. Chop the onion shallots; Wash the curry leaves; split the red chilli into few pieces. Grate the ginger.
  3. Heat a pan and add oil.
  4. Add curry leaves, onion, grated ginger and chilli. Fry for 1-2 minutes.
  5. Add the greens and salt.
  6. Stir fry until it is cooked.
  7. Garnish with grated coconut.
Notes:
Some of the greens take longer to cook. Cook them with little water in a covered pan.
