Chicken Roll
 
It can either be made for a packed lunch or for the weekend dinner as a treat. It can aslo be called Frankie.

Ingredients:
  • Chicken boneless - 500g
  • Onion - 2 medium or 300g
  • Tomato - 1
  • Capsicum - 1
  • Ginger-garlic paste - 2 tsp heaped
  • Oil - 3 tblsp
  • Coriander leaves chopped - 1 tblsp
  • Egg - 2
  • Oil for frying

Spice powders:

  • Turmeric powder - 1/2 tsp
  • Chilli powder - 1 for medium spicy or 2 tsp for extra spicy
  • Garam masala - 1/2 tsp
  • Coriander powder - 1 tsp
  • Pepper powder - 1/2 tsp (optional)

Ingredients for the maida chapatis:

  • Maida flour - 400g
  • Oil - 1/2 tblsp
  • Salt - to taste
  • Milk - 1/2 cup or 125 ml
  • Baking soda - 1/2 tsp (optional)
  • Water - as per requirement

Method:
  1. Make a dough by mixing the maida flour, oil, salt, milk and baking powder with little water.
  2. Leave it for atleast 1 hour for the dough to raise.
  3. Chop the onion, tomato, capsicum and coriander leaves.
  4. Heat oil in a big frying pan.
  5. Add chopped onion and ginger-garlic paste and fry for few minutes until the onion is soft enough.
  6. Add tomatoes and all the spice powders and let it fry for few minutes.
  7. Add chicken pieces, chopped coriander leaves and stir.
  8. Remove this stuffing from the pan and leave it aside in a bowl for it to be cooled down.
  9. Make about 3cm wide balls from the maida dough.
  10. Beat the eggs.
  11. Roll the dough ball with flour into 12-15cm wide flat chapati.
  12. Place one side of chapati on a tawa on a medium heat for about 1-2 minutes to cook them slightly.
  13. Coat other side of chapati with the beaten egg.
  14. Turn it over and fill it with a table spoon of stuffing.
  15. Fold it into a roll.
  16. Repeat the above four steps for all the chapatis.
  17. Heat a clean large frying pan.
  18. Add little oil and shallow fry the rolls few at a time.​
