Coconut milk pudding

Coconut milk pudding is an Indian delicacy made on a special occasion.
Preparation Time : 10 mins

Cooking Time : 30-45 mins

Serves : 5-6

Ingredients:
  • Fresh coconut milk - 300ml or Tinned coconut milk - 200ml and 100ml water
  • Milk - 200ml
  • Egg Medium - 6
  • Sugar - 175g
  • Cardamom - 7-8
  • Cashewnut - 25g or 19-20

Method:
  1. Make fresh coconut milk if tinned coconut milk is not available; If tinned coconut milk is available, add water to it; Whisk the egg well.
  2. Add coconut milk, sugar and milk to the beaten egg and beat well.
  3. Grind cardamom and cashewnuts with a 2-3 tblsp of water into a coarse paste.
  4. Filter this cardamom and cashewnuts mix.
  5. Keep the water from this filter and discard the fibre bit.
  6. Add this water to the egg and coconut milk mix.
  7. Grease a round dish of 16-18cm diameter and 6-8cm deep. Add the combined egg and coconut milk mix to this dish.
  8. Place this dish covered in a big pan of water and steam for about 45 minutes.
  9. Serve it chill.

Notes:
You could replace coconut milk with cow milk for a different taste.
