Egg coconut masala

Egg coconut masala also called Kajana combines the sweet taste of coconut and spicy taste of green chilli with the egg mixture.

Ingredients :

 

  • Egg - 3
  • Indian onion shallots - 8-10 - finely grated
  • Green chilli - 2
  • Ginger-garlic paste - 1 tsp
  • Grated coconut - 3 tblsp
  • Oil - 2 tblsp
  • Water - as required
  • Salt - to taste
  • Coriander leaves chopped - 1 tsp to garnish

Spice powders:

  • Turmeric powder - 1/8 tsp
  • Chilli powder - 1/2 tsp
  • Pepper powder - 1/4 tsp


Method :
  1. Grate the onions and chillies finely.
  2. Grate the coconut and grind it with little water into a smooth paste.
  3. Beat the egg. Add ginger-garlic paste and ground coconut to the beaten eggs. Stir well.
  4. Heat a pan on medium heat and add oil.
  5. Add the chopped onion and chillies; fry for few minutes.
  6. Add all the spice powders and salt; stir well.
  7. Add the egg mixture and about 150ml of water to the pan; Stir well.
  8. Reduce the heat to low, cover and cook for about 4-5 minutes.
  9. Garnish with coriander leaves.


Notes : This recipe goes well with Dosai or Aappam.
