Idiaappam (String Hoppers)

Idiaappam is a South Indian/Srilankan dish made of rice flour. It is very light to eat. can be made either on a normal day or for the guests.

Main Ingredient : Rice

Ingredients :

 

  • 2 Cups fine Raw Rice Flour (either steamed or roasted)
  • 1 Cup Boiling Water
  • Salt – to taste


Method :
  1. Put the flour in a bowl. Pour the boiling water with salt to taste. Mix with the handle of a wooden spoon. Knead into a smooth dough.
  2. Press out about 1½ - 2 tablespoon dough through a idiyappam press onto a bamboo plates.
  3. Steam 6 – 8 of these at a time over boiling water.

Note: If either a steamed or roasted rice flour is not available, then sieve the flour well. Steam it over boiling water for ½ hr, keeping it covered. Allow to cool still under cover.The flour can be steamed in the evening and kept covered overnight for use in the morning.


Notes : Traditionally eaten with mutton or chicken curry or coconut milk and sugar.
