Jaalar Ulladam are made on a special occasion as they taste so good. One minor drawback is it consumes lot of time.

Main Ingredient : Chicken Flour

Ingredients :

 

Pancake

  • 1 cup (250g) - Maida flour
  • 1 - Egg
  • Salt - to taste

Ing for Stuffing:

  • 3 - Onion
  • 1 - Carrot
  • 1 - Tomato
  • 400g - Boneless chicken
  • 1 tsp - Ginger Garlic paste
  • 1/4 tsp - Turmeric powder
  • 1 tsp - Chilli powder
  • 1/2 tsp - Cumin (jeera) powder
  • 3-4 tblsp - Oil
  • 2 tblsp - Chopped coriander leaves
  • Salt - to taste

To make the jaalar ulladam:

  • Oil - for frying
  • Egg - 3
  • Salt - to taste
  • Pepper powder - 1 pinch


Method :
  1. Method to make Jaalar dosai
  2. 1. Mix all the above ingredients listed under pancake with plenty of water to make it into a thin batter.
  3. 2. Sieve the batter to filter it from any lumps.
  4. 3. Heat a non-stick frying pan on a medium heat.
  5. 4. Take a one/three hole cup which is designed specifically for this pancake.
  6. 5. Fill it with the batter and pour the batter on the pan as a pattern which is called Jaalar.
  7. 6. Grease slightly with oil/butter.
  8. 7. Take it from the pan once it is cooked.
  9. 8. Repeat the steps 5 to 8 until all the batter is finished.
  10. Method to make stuffing:
  11. 1. Cut Chicken into very small pieces (about 1cm thick and 2cms long); cut the onion, tomatoes and carrot finely.
  12. 2. Heat a frying pan on a medium heat. Add a table spoon of oil and chicken pieces and stir them for 4-5 minutes.
  13. 3. Remove the chicken pieces from the pan and leave them aside.
  14. 4. Add rest of the oil to the heated pan. Add Onion and carrot and fry them until onion is half cooked.
  15. 5. Now add the tomatoes, ginger-garlic paste and all the spice powder. Fry them until tomatoes are cooked well.
  16. 6. Add the chicken pieces and stir well.
  17. 7. Add chopped coriander leaves and remove the stuffing from heat and keep it in a bowl and let it cool.
  18. Method to make stuffed jaalar
  19. 1. Beat the eggs well with salt and pepper.
  20. 2. Heat a frying pan on a medium heat.
  21. 3. Take a plate and lay two of pancakes (Jaalar) on the plate.
  22. 4. Add 2 tblsp of stuffing and spread it around; Fold it into a square.
  23. 5. Add a table spoon of egg mix to the top the square and spread it.
  24. 6. Place the folded pancake on the pan and grease it with oil.
  25. 7. Let it cook for couple of minutes and turn it over and let it cook again.
  26. 8. Remove it from heat and leave it on a big plate as a single layer as stacking causes the pancakes to sweat and become saggy.
  27. 9. Repeat the steps from 3 to 8 until all the pancakes are stuffed and fried.
  28. 10. Jaalar Ulladam are ready to be eaten.
