Kovakkai StirFry

Stir-frying Kovakkai(Tindora/little gourd) with Indian spices makes a tastier side-dish for rice or chapati.

Ingredients :

 

  • Kovakkai - 250g
  • Onion - 1 small
  • Tomato - 1
  • Turmeric powder - 1/8 tsp
  • Chilli powder - 1 tsp
  • Curry leaves - few (optional)
  • Oil - 1 & 1/2 tblsp
  • Salt - to taste
  • Water - as required

Method :
  1. Chop the onion and tomato; chop the vegetable diagonally into thin slices.
  2. Heat a pan and add oil.
  3. Add curry leaves, onion and saute for few minutes.
  4. Add tomato and all the spices and saute for few minutes.
  5. Add chopped kovakkai and stir for 1-2 minutes.
  6. Add 1/4 cup of water, cover and let it cook for about 8-10 minutes or until the vegetable is cooked. Open the lid and stir every few minutes.
  7. Kovakkai stirfry is ready to be eaten.
