Shaami Kebab / Mutton cutlet

Mutton cutlet also known as Shami kebab combines minced lamb and Indian spices to make a delicious appetizer.

Ingredients :

 

Ingredients to be fried and ground:

  • Minced Lamb/mutton - 400g
  • Cinnamon - 1 inch long strip
  • Cloves - 2
  • Cardamom - 1 without the shell
  • Poppy seeds - 1 tsp (optional)
  • Roasted gram dal (Channa dal ) - 2 tblsp
  • Grated Coconut - 5 tblsp
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 1½ tsp
  • Onion - 1 small
  • Ginger - 1" long and 1" wide piece
  • Garlic - 3 big cloves
  • Green Chilli - 2

Other Ingredients:

  • Chopped coriander leaves - 1/2 tblsp
  • Egg - 1
  • Plain/Maida flour - 150g
  • Salt - to taste
  • Sunflower oil - 300ml for deep frying


Method :
  1. Peel the onion, ginger and garlic; Grate the onion, ginger, garlic, chilli, coconut and coriander leaves coarsely.
  2. Rinse the meat and drain them well.
  3. Heat a pan.
  4. Add cinnamon, cloves, cardamom, poppy seeds, roasted gram/channa dal and grated coconut. Fry them for about 3-4 minutes. Remove them from pan and grind them into a fine powder without adding any water once they are cold and keep it aside.
  5. Add the chopped onion, ginger, garlic and green chillies to the heated pan and saute them until the onion becoems translucent.
  6. Add minced meat, turmeric powder and chilli powder; Fry and cook them for about 7-8 minutes.
  7. Grind all the fried ingredients without water when they are cold enough.
  8. Beat the egg and keep it in a bowl.
  9. Combine the ground mix, ground channa dal powder, beaten egg, salt and coriander leaves and mix well.
  10. Take about 3cm ball of the meat mix and flatten them into cutlets.
  11. Place the flour in a plate.
  12. Heat a deep frying pan on medium heat and add oil.
  13. Coat the cutlets with the flour.
  14. Deep fry the coated cutlets in oil 4-5 at a time until they become golden brown.


Notes : This dish can be served as an appetizer in the parties or as a side-dish for Lunch/Dinner.
