Plantain StirFry 02

Plantain stirfry made this way goes well with any curry and Rice.

Ingredients :

 

  • Plantain - 3
  • Turmeric powder - 1/8 tsp
  • Oil - 2 tblsp
  • Curry leaves - 5-6
  • Dry Red Chilli - 2
  • Mustard seeds - 1/4 tsp
  • Urid Dhal - 1/2 tsp
  • Onion - 1/2 small
  • Cumin (jeera) powder - 1/4 tsp (optional)
  • Water - as required
  • Salt - to taste

Method :
  1. Wash, peel and cut plantain into 2cm cubes; Chop the onions.
  2. Add plantain, water, turmeric powder and salt to a pan and heat it.
  3. Cover and cook the plantain for about 5-7 mins. Drain the water.
  4. Heat a frying pan on the stove and add oil.
  5. When the oil is hot enough, add mustard seeds, urid dal, red chilli and curry leaves. Fry for about a minute.
  6. Add chopped onion and fry for about 1-2 mins.
  7. Add cooked plantain slices, pinch of salt and cumin powder. Fry for 8-10 mins to make it crispier.
  8. Serve them in a serving dish when they are ready.
