Salmon curry

Ingredients :

 

  • Salmon - 400g
  • Onion - 1 medium
  • Ginger - 1 inch long and 1 inch thick - crushed
  • Green Chilli de-seeded - 3 for medium spicy or 5 for extra spicy
  • Turmeric powder - 1/4 tsp
  • Ground pepper - 1/2 tsp
  • Chopped mint/dill - 2 tblsp
  • Chopped coriander leaves - 2 tblsp
  • Lemon juice - 2 tblsp
  • Single cream - 100ml
  • Sunflower oil / any cooking oil - 2 tblsp
  • Salt - to taste


Method :
  1. Heat the oven to 180° celsius/ 350° fahrenheit.
  2. Chop the onion and dill/mint leaves; Slit the chilli and de-seed it.
  3. Take an oven proof dish that can be placed on the hob.
  4. Switch on the hob and place the oven proof dish.
  5. Add oil. When the oil is hot enough, add the chopped onion, ginger, chilli and fry for 2-3 minutes.
  6. Add turmeric powder, pepper, salt and fish fillets. Saute the fillets for about 2-3 minutes.
  7. Switch off the stove.
  8. Add the chopped dill/mint leaves, 3/4s of coriander leaves, lemon juice and about 1/2 a cup of water. Stir well. Take care not to break the fish.
  9. Cover the fish pan with a lid/foil and place it in the oven on the medium shelf.
  10. Let it cook for about 15 minutes.
  11. Switch off and remove the pan from the oven.
  12. Add all the single cream and stir.
  13. Garnish with rest of the coriander leaves.​

Notes : Salmon can be replaced by any solid white fish. This curry taste better with rice. It can also be cooked on the hob on a low heat.
