Semolina payasam

Semolina payasam also known as feerni is an Indian pudding made on a special occasion as a dessert.

Ingredients :

 

  • Semolina - 100g
  • Full Fat Milk - 500ml
  • Sugar - 100g
  • Condensed milk - 3-4 tblsp (optional)
  • Cashewnuts - 20g
  • Ground Almond - 1 tblsp (optional)
  • Ghee - 1 tblsp or Butter - 25g
  • Cardamom - 3-4


Method :
  1. Fry the semolina on a frying pan on a low heat for about 8-10 minutes and leave aside.
  2. Cut the cashewnuts into half each.
  3. Heat the butter/ghee and roast the cashewnuts and leave aside.
  4. Heat the milk in a pan on a medium heat with cardamom and sugar.
  5. When the milk is luke warm, add the semolina gradually.
  6. Let the semolina cook for about 5-6 minutes. Stir well to stop getting lumps.
  7. Add the condensed milk, a cup of water and ground almond.
  8. Remove the cardamom from feerni;
  9. Place 2 scoops of feerni to a dessert bowl and decorate with fried cashewnuts; Repeat it for all the bowls.


Notes : You could add tapioca for the added taste. If you are adding tapioca, soak it in water for about 1 hour, cook separately and add it along with the semolina.
