Ingredients :


    80g/3oz smoked salmon
    4 slices cucumber
    2 tsp. pumpkin seeds
    Juice from 1 lemon
    1/2 carrot
    8 physalis
    1 beetroot
    100g/3.5oz baby red leaf, spinach, rocket, red chard

Method :
  1. Grate the carrot.
  2. Slice the cucumber lengthways with a potato peeler.
  3. Slice the smoked salmon.
  4. Add all the ingredients to a plate and serve with fresh lemon juice or our sesame salad dressing.
