Ingredients :

 

  • Onion - 1 small
  • Grated ginger - 1 tsp
  • Green Chilli - 2-3 (optional)
  • Potato - 1 small
  • Carrot - 1 small
  • Egg plant - 3 or Aubergine - 1/3 of medium one
  • Spinach chopped - 30g or 2 tblsp heaped
  • Ground rice - 70g or 1/2 cup
  • Gram flour (Besan flour) - 210g or 2 cups
  • Sodium bicarbonate - 1/8 tsp
  • Chilli powder - 2 tsp
  • Curry leaves - 1 sprig
  • Chopped coriander leaves - 3 tblsp
  • Yoghurt - 3 tblsp
  • Sugar - 1 tsp
  • Orange Food colouring - 1 pinch (optional)
  • Oil - 250ml for deep frying
  • Water - as required
  • Salt - to taste


Method :
  1. Grate all the vegetables, onion, ginger and chilli; Wash and chop the curry leaves and coriander leaves.
  2. Sift both the gram flour and ground rice.
  3. Combine all the grated vegetables, onion, ginger, chilli,rice flour, besan flour, sodium bicarbonate,chilli powder,yoghurt, sugar, food colouring and salt.
  4. Add the chopped coriander and curry leaves.
  5. Set aside for about 10 minutes.
  6. After setting aside for 10 minutes, add few tablespoons of water if needed.
  7. Make 3 cm wide patties and deep fry them in oil.


Notes : Taste better with Raitha or tomato ketchup.
