Vegetable StirFry

Yummy South Indian side dish made with vegetables and spices. Suitable for rice.

Main Ingredient : Vegetables
Recipe Type : Dinner Lunch

Ingredients :

 

  • Potato medium - 2 or 200g
  • Carrot small - 2 or 100g
  • Beetroot small - 2 or 100g
  • Green Beans - 50g (optional)
  • Urid Dhal - 1 tsp
  • Curry leaves - few
  • Shredded coconut - 1-2 tsp (optional)
  • Cooking Oil - 5 tsp
  • Salt -as required

Spice powders:

  • Turmeric powder - 1/8 tsp
  • Chilli powder - 1 for medium spicy or 2 tsp for very spicy
  • Cumin (jeera) powder - ½ tsp (optional)


Method :
  1. Wash and cut the vegetables into small cubes of ½cm thick. Cut beans into small pieces.
  2. Heat a pan on the stove and add oil.
  3. After a minute, add urid dhal and curry leaves. Fry for a min.
  4. Add cut beetroot and a 1/8 tsp salt. Stir-Fry for a min.
  5. Cover and cook for 5 mins.
  6. Add curry leaves, turmeric powder, chilli powder, salt, potato, carrot and beans.
  7. Fry for few minutes.
  8. Cover and cook until all the vegetables are cooked well. It might take about 15 mins. Open the lid and stir the vegetables few times whilst they are getting cooked.
  9. Once the vegetables are cooked, add cumin powder and stir-fry for further few mins until they become crispier.
  10. Garnish with shredded coconut.


Notes : Suitable for rice and Sambar/Mung Dhal curry/Rasam/Dhal.
