Sambar Vadai

Sambar Vadai is an Indian delicacy made with lentil and sambar.

Ingredients :

 

  • Urid dhal - 250g or 1 250ml cup
  • Ground rice - 1 tblsp (optional)
  • Sodium bicarbonate - 1/8 tsp
  • Onion - 1 small
  • Crushed pepper - 1 tsp
  • Grated ginger - 1/2 tsp
  • Curry leaves - 7-8
  • Green Chilli - 1 (optional)
  • Oil - 300ml for frying
  • Water - as required
  • Salt - to taste


Method :

  2. Wash and soak the urid dhal in water for about 30 -45 mins. Drain it.
  3. Chop the onion, curry leaves and chilli. Grate the ginger. Crush the pepper corns.
  4. Grind the soaked urid dhal in a blender with salt, sodium bicarbonate and little water to a fluffy texture. Batter should be semi thick like a dropping consistency.
  5. Remove the dal batter from the blender and put it on a big bowl. Add ground rice if the batter become thinner than expected.
  6. Add chopped onion, curry leaves, chilli, grated ginger and crushed pepper. Stir well.
  7. Leave this batter for atleast 2 hours.
  8. Heat a deep frying pan. Add oil.
  9. Keep a bowl of water to make your hand wet.
  10. Wet your hand in that water.
  11. Take about one and half tablespoon of batter; make a flat cake on the palm of your hand with a hole in the middle. Plastic sheet with a dip of oil could be used for making the flat cake.
  12. Put this vada to the hot oil. Fry 2-3 vadas at a time.
  13. Keep a big bowl of Hot Sambar by the side.
  14. Keep a dry plate with 1-2 kitchen towels on it to absorb the excess oil.
  15. Once the vadas are fried on both sides, remove them with the slotted spoon and place them on a plate.
  16. After all the vadas are fried, place the vadas in the bowl of Sambar.
  17. Boil the Sambar for few minutes for the vadas to absorb the sambar.
  18. Garnish them with coriander leaves.​


Notes : Please try Dahi Vada for variation. They can also be made quickly when there is left over vadai or sambar.
