Eddoes stir-fry

Indian way of frying eddoes.

Ingredients :

 

  • Eddoes - 250g
  • Cumin (jeera) powder - 1/2 tsp (optional)
  • Chilli powder - 1tsp
  • Turmeric powder - 1/8 tsp
  • Oil - 2 tblsp + 1 tblsp for the end
  • Curry leaves - few
  • Water - as required
  • Salt - to taste


Method :
  1. Cook eddoes in a pan of water with salt. Drain the water.
  2. Peel off the skin and cut each into 1cm thick slices.
  3. Heat a frying pan on the stove and add oil.
  4. When the oil is hot enough, add curry leaves. Fry for a min.
  5. Add turmeric powder and chilli powder.
  6. Add eddoes slices,pinch of salt and cumin powder.
  7. Fry for about 10-12 mins to make it crispier; Add oil if needed.
  8. Serve them in a serving dish when they are ready.

Notes : Eddoes are a small and finger sized, brown skinned root vegetable. It is suitable for Rice and Sambar, Rasam, Mung Dhal curry, Yoghurt curry, Tamarind Egg Curry, Tamarind egg omlette curry or Garlic curry.
