Ingredients :


  • Basmati Rice - 750g
  • Oil - 90ml ( 30ml for every 250g of rice)
  • Cinnamon - 1/2 inch long strip
  • Fenugreek - 1 tsp
  • Onion - 1 medium
  • Paandan leaves or Bay Leaves - 2-3
  • Garlic - 6-7 small cloves
  • Thick tinned coconut milk - 6 tblsp or 200ml fresh coconut milk
  • Water - as required
  • Salt - to taste

Method :
  1. Chop all the onion and garlic; Rinse the rice and soak it in water for about 10 minutes.
  2. Wash and soak the rice in a big pot of water for 10 minutes. Drain it.
  3. Heat a 3 litre saucepan on a medium heat and add oil.
  4. Add cinnamon and fenugreek; fry for about 1/2 a minute.
  5. Add onion and garlic; saute them on a medium heat until they become translucent.
  6. Add about 1ltr of water, coconut milk, bay/paandan leaves and salt. If you are adding fresh coconut milk, reduce the amount of water.
  7. When the water starts to boil, drain the rice and add it; reduce the flame to low, cover and cook the rice for about 15-20 minutes or until all the water is evaporated.

Notes : Caution:Cooking time and required amount of water varies depending on the kind of rice and whether it is new or old. Water quantity mentioned here is just a guideline only.
